At Dubai & Dips in Clear Lake, the weekend board stays lit until midnight, so a proper dessert does not have to wait until tomorrow.

Fridays and Saturdays are the late flights: the doors stay open until midnight. The rest of the week we close at 10 PM, still later than a lot of dessert spots.

Late-night dessert has its own rules. You want something that feels like a treat, but you might not want a triple espresso at 11 PM. Here is how we would steer you through the menu.

Cold and indulgent: the frappes

The frappes route is where most late visits start. They are blended, cold and rich:

• Dubai Chocolate Frappe, with pistachio and dark chocolate drizzle and whipped cream.
• Pistachio Frappe, finished with green pistachio sauce.
• Biscoff Frappe, with cookie butter swirled through and a whole Biscoff cookie on top.
• Salted Caramel Frappe.

Fruit-forward: smoothies

If you want something lighter, the smoothies route has Strawberry, Strawberry Banana, Mango and Banana Date smoothies.

Warm and crisp: crepes, waffles and kunafa

Some nights call for something warm. The crepes and waffles routes are on the boards in the shop, and the D&D Desserts route has kunafa: crisp golden pastry topped with crushed pistachio. It is a good one to share across the table.

Matcha, if you still want a lift

If you are heading to something rather than home, the matcha route is long: Strawberry, Pistachio, Biscoff, Mango, Banana, Blueberry Cream and Banana Date matchas, plus a 12 oz Matcha Cortado.

Coffee, if the night is young

The classic coffees route covers the espresso side of the menu: Espresso, Cappuccino, Americano, Cortado and Affogato, plus Leche y Leche, a Spanish-style cortado. An Affogato makes a neat bridge between coffee and dessert, and the lattes route has sweeter options such as the Spanish Latte and the Tiramisu Latte.

A late-night order for two

Sharing is the best way to do late-night dessert. A simple order for two: one Dubai Chocolate Frappe, one Biscoff Frappe and a kunafa in the middle of the table. Swap drinks halfway, and you have tried three different sides of the menu in one visit.

Plan it: late-night timing tips

• Aim for before 11:30 PM on weekends. We are open until midnight, but arriving with a little room means you are never rushed.
• Order ahead if you are on the way. Order ahead for pickup and it will be ready when you walk in.
• Check the live status. Holidays can change the hours; the visit page always shows the hours for today.

Why the room is worth staying in

Late-night dessert is better when there is somewhere good to sit. The shop is a room built to linger in: a deep green wall with the gold DUBAI & DIPS sign over the counter, marble tables and white chairs. It is the kind of place that works for a late date, a catch-up after work, or the last stop of a night out.

Parking is easy: there is a free lot right out front, with more spaces around the side of the building.
